  • OUR NO-FUSS BANANA & PEAR TART

    I made this one-pan tart for my husband's birthday. It went down an absolute treat for the whole family!

    Ingredients

    3.5 oz coconut sugar

    2.5 oz organic butter

    1 - 2 pears, sliced

    1 - 2 bananas, sliced

    2 sheets of puff pastry

    Method

    In an oven-proof fry pan melt the butter and sugar on the stove top, continuously stirring until it caramelises and is bubbling.

    Remove from the heat.

    Layer the chopped fruit into the pan creating approx 2 layers in the caramelised sauce.

    Cut the corners off of the puff pastry to create a rounded shape.

    Lay both sheets of puff pastry over the fruit, tucking it into the sides to encase the layers, like a fitted sheet. This will become the base of the tart.

    Cut a slit in the centre of the pastry to allow steam to escape.

    Place pan in the oven to bake at 350° Fahrenheit for approx 25 minutes or until pastry is nicely browned. At this stage, it will look like you’re cooking a pie in the oven.

    Remove from the oven and allow to cool for a few minutes.

    Place a board or plate over the frypan, and flip it. Be careful when doing this as to not burn yourself!

    Serve with an almond latte for a brunch treat, with coconut ice-cream for a yummy dessert or enjoy simply by itself.
